1 Girl 1 Chicken





I couldn't stop thinking about roast chicken after watching Barefoot Contessa cooking the "Perfect Chicken" on her tv show so I dug out my cookbook and visited the supermarket with a list of ingredients to make my own

And it did indeed turn out perfectly!


The carrots sitting on the bottom were the best I've tasted!

After eating the chicken breasts over 2 nights I didn't want to waste the legs so it was time to try a Weight Watcher recipe; Sticky Honey and Soy Chicken (adds approx 1 point to chicken)


Despite hating the smell when making chicken stock I was brave and determined to use all the chicken I could and a stock was made and is now freezing in ice cube racks to used on some soups this week


What do you do with your leftover chicken?

Always a chicken and sweet potato curry. And G makes sure he takes off enough for a sandwich for his supper. If there's any left after all that then it's chicken noodle soup.

Being a veggie I don't eat chicken. But I think if you do eat meat, then you should use it all and not waste it, just as you have done so well here.
I keep looking at that little pink chair, it is just so cute..x

That chicken looks absolutely yummy. When I roast a chicken I try to make as much as I can out of it too. :)

Hi domestic goddess!!! Your chicken looks fabulous to me! And yummy too! My mum uses to make a salad with chicken leftovers, raw peppers and celery..very healthy..and no need of WW!

That looks delicious! I have a whole chicken in the freezer I am going to get out RIGHT NOW. I love that you can roast a chicken and do so many things with it over a few days. Salad, enchiladas,sandwiches on gorgeous crusty bread; the list goes on.

yum. It always seems like a simple thing to do, but actually roasting chicken well can be tricky to get right. Took me ages to feel cofident enough to roast a chicken for anyone. Now it's one of my favourite things to do. I stuff with thyme, lemon and onion, coat in butter and a sprinkle of black pepper. Leftovers are used for sandwiches for the husband's lunch next day (and for me, or cold with a salad), put in the cat's belly (he'd never forgive me if I didn't give him some), and the rest goes into a gravy, veg, and potato topped pie for the Girl. If there was enough for a large pie, I'd make one for us too. Nothing wasted here either! Though I have not made my own stock for a zillion years.

You should feel chuffed with your roast, turned out lovely! xx

Oh yum!
We have a roast on a sunday and feast on the leftover meat for lunches for about three days.

What channel do you watch Barefoot doodah on?

oooh, that looks soooooo gooood! love the idea of putting the carrots underneath - will be trying that for sure! and if i have any chicken leftover, its good ol' sandwiches! either with salad or I make some stuffing - depending on the level of comfort food needed!

I love the Barefoot Contessa and this recipes looks wonderful, just looking at it is making my mouth water.

I always do Ina's Perfect Roast Chicken!!! Then I make chicken stock, it always taste great, and so handy in the freezer!!!!!
